Tasting Notes

Deep ruby with a garnet edge, consistent with older French barrel maturation. The nose is layered and specific. Concentrated bramble and ripe raspberry lead, followed by a core of black cherry and blackcurrant. Behind the fruit, Christmas pudding spice signals the 20-month barrel programme. A distinctive herbal thread runs throughout: green bell pepper, dried thyme and a hint of tobacco leaf. This is the Cabernet Franc signature and it is present from the first pour. The palate entry is medium in weight with soft, rounded tannins that dissolve cleanly into the mid-palate. The 15% Grenache contribution is felt here; a juicy, fruit-forward quality that lifts the mid-palate and adds freshness to what could otherwise be a stern, angular wine. Dark cherry, black plum and leather carry through the centre. A thread of vanilla and clove from the older French oak adds structure without flavour dominance. The finish is persistent. Tobacco, dried herb, black fruit skin and a mineral trace linger for 35 to 40 seconds. The defining quality of this wine is the precision of its savoury character. The green pepper and herb notes are specific, structured and intentional — not a flaw, as they sometimes read in less controlled Cabernet Franc, but the point of the wine.

A hand-harvested, wild-fermented South African Cabernet Franc from two high-altitude mountain vineyards. This is the wine that took a Masters Medal at the Global Cabernet Franc Masters in London — produced at a scale that makes that result even more unlikely.

The production method matters here. Wild yeast fermentation means no commercial yeast strains are added to drive fermentation on a predictable schedule. The process is slower, less controllable and produces more aromatic complexity than commercial yeast fermentation. The basket press is the oldest form of wine pressing, applying gentle pressure over time rather than industrial force, which means fewer harsh tannins are extracted. Twenty months in older French barrels adds texture without oak flavour. No fining means the wine goes to bottle with its natural proteins and tannins intact.

About The Winery

Bruce Jack grew up in Cape Town and studied winemaking at the University of Adelaide in the early 1990s, returning to South Africa to found Flagstone Winery in 1998. Constellation Brands acquired Flagstone in 2008. During this period, Bruce also rebuilt the Kumala brand to 32.5 million bottles annually. He was named Winemaker of the Year by two separate South African organisations and has made wine on four continents across 30 years of professional winemaking. Bruce Jack Wines launched in 2018. The Ghost in the Machine range was 15 years in development before it reached the market. Each wine in the range is built from specifically managed vineyards and uses low-intervention production techniques including wild yeast fermentation, basket pressing, and coarse filtration only.
