Tasting Notes
Straw yellow with bright green hues. The nose opens with pink grapefruit and lychee, with sage and elderflower above them, and chive blossom and white pepper behind. On the palate the wine is refined and supple, with ripe green melon and peach and a lively acidity. A mineral, flinty edge runs underneath. The finish carries lime and pineapple.
Food Pairing
This white wine is dry and herbal, with citrus and a mineral edge, so it suits seafood and green flavours. Grilled tilapia with lemon and coriander, prawns and oysters are the strongest matches, and goat’s cheese or asparagus also work. The sage and elderflower notes suit chicken roasted with herbs. Serve at 10 to 12°C. For a Nairobi sundowner or a weekend lunch where the fish comes off the grill, this white sits comfortably beside the plate.

Umbrian Sauvignon Blanc and Sémillon from fossil rich soils, scored 91 by Wine Spectator. Order online in Nairobi through The Wine Box.
The vineyards for Conte della Vipera sit between 250 and 350 metres above sea level, on soils rich in marine fossils. The Sauvignon Blanc and Sémillon are picked by hand and fermented in stainless steel, so the fruit comes through without oak. Wine Spectator noted a flinty finish.
The 2023 season ran late. A wet spring slowed budbreak and vine growth but refilled the groundwater, and flowering came about seven days later than average. Hot weather from late July through August, with big swings between day and night, let the grapes ripen gradually. Sauvignon Blanc was picked at the end of August and Sémillon finished in mid-September. Wine Spectator scored the wine 91 points.
Conte della Vipera was first made in 1997. For a Nairobi buyer who wants a dry white with more going on than a simple Sauvignon Blanc, this is a good fit. Best suited to seafood lunches and sundowners where the wine needs to be bright and herbal.

Castello della Sala is the Umbrian estate of Marchesi Antinori, a Florentine family that has made wine since 1385. The Conte della Vipera label shows the estate’s 13th century Saint John’s Chapel, and the wine is named for the castle’s first owners. The estate is also home to Cervaro della Sala, a Chardonnay led white. The wines are available through The Wine Box in Kenya.
