About the Distillery
Aultmore Distillery was founded in 1897 in Keith, a town in the Speyside region of Scotland. It is known for producing whiskies with a delicate and floral character, which has earned the distillery a loyal following among whisky enthusiasts.
How this product is made
Malting: Barley is soaked in water and allowed to germinate, converting the starches into sugars. The germinated barley, known as malt, is dried in kilns to stop the germination process.
Mashing: The malted barley is ground into grist and mixed with hot water in a mash tun. This process extracts sugars from the barley, creating a sugary liquid known as wort.
Fermentation: The wort is fermented with yeast in washbacks, where the sugars are converted into alcohol, producing a liquid known as “wash.”
Distillation: The wash is distilled twice in traditional copper pot stills. This double distillation allows the spirit to achieve the desired purity and concentration of flavors.
Aging: The distillate is then transferred to oak casks, typically ex-bourbon casks, for a minimum of 12 years of maturation. During this time, the whisky gains complexity and character from the interaction with the wood.

Aromas: Delicate and aromatic, with notes of green apple, pear, and floral hints.
Palate: Smooth and well-balanced, with flavors of honey, vanilla, citrus, and a touch of spice.
Finish: Lingering and gentle, with a slight nuttiness and a subtle sweetness.

The alcohol by volume (ABV) of Aultmore 12 Year Old is typically around 46%, which is higher than the standard 40% for most whiskies. This higher ABV contributes to its rich and full-bodied character.
