About the Distillery
The Caol Ila Distillery, founded in 1846, is situated on the northeast coast of the Isle of Islay, an island known for its distinctive style of peated whisky. Caol Ila is one of the largest distilleries on Islay and is renowned for producing a wide range of high-quality whiskies.
How this product is made
Ingredients: The whisky is made from 100% malted barley, sourced from different regions. The peat used during the malting process contributes to the signature smoky character of Islay whiskies.
Mashing: The malted barley is ground into grist, and hot water is added to create a mash. The enzymes in the barley convert the starches into fermentable sugars.
Fermentation: The mash is then fermented using yeast, and the fermentation process converts the sugars into alcohol. This produces a low-alcohol liquid known as “wash.”
Distillation: The wash is distilled twice in traditional copper pot stills. The tall necks of these stills allow for a lighter spirit, preserving the delicate flavors of the whisky.
Aging: The new make whisky is transferred to oak casks for aging. Caol Ila 12 Year Old is aged for a minimum of 12 years in a combination of ex-bourbon and sherry casks. The aging process allows the whisky to develop its rich and complex flavors.
Bottling: After the aging period, the whisky is carefully selected and bottled at its natural cask strength or diluted to the desired alcohol by volume (ABV).”
Technical Details
Appearance: Caol Ila 12 Year Old has a pale gold to light amber color, reflecting its time in oak casks.
Nose: The aroma offers a delightful balance of peat smoke and fruity sweetness. Notes of citrus, green apple, and pear are complemented by a gentle maritime and iodine character.
Palate: On the palate, the whisky presents a complex and well-rounded taste. The peat smoke is more prominent, accompanied by flavors of honey, vanilla, and a touch of toffee. Maritime elements and briny notes add depth to the profile.
Finish: The finish is long and warming, with lingering smokiness, hints of spice, and a slight dryness.

Caol Ila 12 Year Old typically has an alcohol by volume (ABV) of around 43%, which is standard for many single malt whiskies.
