About the Distillery
Diplomático is a distinguished Venezuelan rum distillery with a history dating back to 1959. The distillery is located at the foot of the Andes Mountains, where it benefits from the country’s tropical climate and access to high-quality sugarcane for rum production.
How this product is made
” Ingredients: Mantuano Añejo is made from high-quality sugarcane molasses, a byproduct of sugar production. The use of molasses contributes to the rum’s rich and robust flavors.
Fermentation: The molasses is mixed with water and yeast to initiate fermentation. This process converts the sugars in the molasses into alcohol, producing a low-alcohol liquid known as “sugar wine.”
Distillation: The sugar wine is distilled in copper pot stills or column stills, creating a higher-proof spirit known as “new make” rum. Diplomático is well-known for using a combination of distillation methods to achieve its signature flavor profile.
Aging: The new make rum is aged in a combination of American white oak and Spanish sherry casks for up to eight years. This extended aging process allows the rum to develop its complex and mature flavors.
Blending: After aging, the rums from various casks are carefully selected and blended by the master blender to achieve a consistent flavor profile.
Bottling: The blended rum is then carefully diluted to the desired alcohol by volume (ABV) and bottled for distribution.”
Technical Details
Appearance: Diplomático Mantuano Añejo has a deep amber color, reflecting its aging in oak casks.
Nose: The aroma is rich and inviting, with notes of dried fruit, ripe banana, vanilla, and caramel. There may be a hint of oak and a subtle touch of spice.
Palate: On the palate, the rum offers a smooth and well-balanced taste. Flavors of toffee, dried fruit, and vanilla are complemented by a gentle sweetness and oak undertones.
Finish: The finish is warm and lingering, with a pleasant combination of dried fruit and caramel.
