About the Distillery:
Don Julio Añejo is a premium tequila crafted by the renowned tequila producer Don Julio González. The distillery, located in the highlands of Jalisco, Mexico, is known for its commitment to quality and traditional tequila craftsmanship. Don Julio González began his tequila-making journey in 1942, and the distillery has since become synonymous with excellence in tequila production.
How this product is made:
Agave Harvesting: Don Julio Añejo begins with the careful selection and harvesting of mature blue agave plants. The piñas, or cores, are extracted for further processing.
Cooking: The agave piñas undergo a slow cooking process in traditional masonry ovens. This slow-cooking method allows the agave to caramelize, bringing out rich and complex flavors.
Fermentation: The cooked agave is then crushed to extract the juices, which are fermented in stainless steel tanks. This fermentation process converts the sugars into alcohol, creating the basis for the tequila.
Distillation: The fermented liquid is distilled in copper pot stills to further concentrate and refine the flavors. Don Julio is known for its meticulous distillation process, which contributes to the tequila’s smooth and distinctive character.
Aging: Don Julio Añejo is aged in small batches in American white oak barrels for a minimum of 18 months. This extended aging process imparts additional complexity and depth to the tequila.
