About the Distillery
Don Julio Blanco Tequila is produced by Tequila Don Julio, a tequila brand founded by Don Julio González in 1942. The brand is now part of the Diageo portfolio and continues to uphold its tradition of craftsmanship and dedication to producing high-quality tequilas.
How this product is made
Blue Agave Harvesting: The tequila-making process begins with the harvesting of mature blue agave plants. These plants are cultivated in the rich volcanic soil of the highlands of Jalisco, where they take several years to reach maturity.
Cooking: After harvesting, the blue agave piñas (the heart of the agave plant) are slowly cooked in traditional stone ovens. This cooking process softens the piñas, making it easier to extract the agave juice.
Extraction and Fermentation: The cooked agave piñas are crushed to extract the sweet agave juice, known as ” aguamiel.” The aguamiel is then fermented with yeast to convert the sugars into alcohol, creating a liquid known as “tepache.”
Distillation: The tepache is then double-distilled in copper pot stills to purify the spirit and concentrate the flavors of the blue agave.
Maturation: Don Julio Blanco is a “silver” or “blanco” tequila, meaning it is unaged and bottled shortly after distillation. This allows the vibrant and fresh agave flavors to shine through without any influence from oak aging.
Bottling: The tequila is filtered and bottled at its optimal strength to preserve its purity and authentic agave taste.”
Technical Details
Appearance: Don Julio Blanco has a crystal-clear appearance, typical of unaged tequilas.
Nose: The aroma is fresh and bright, with pronounced notes of agave, citrus, and hints of pepper.
Palate: On the palate, the tequila offers a smooth and clean taste. Flavors of sweet agave, herbal undertones, and a touch of black pepper come to the forefront.
Finish: The finish is crisp and lingering, leaving a gentle warmth and a distinct agave character.
