About the Distillery 

Glenfiddich is located in Dufftown, Scotland, and was founded by William Grant in 1886. It remains family-owned to this day and is one of the few distilleries to have its own cooperage, where casks are made and repaired on-site. Glenfiddich is known for its commitment to traditional whisky-making methods and its innovative approach to aging and maturation.

How this product is made 

Malted Barley: The production of Glenfiddich 12 Year Old starts with the selection of high-quality malted barley, which is sourced from Scottish barley farms. The barley is allowed to germinate, after which it is dried in kilns to halt the germination process. This prepares the barley for mashing.

Mashing: The dried malted barley is ground into coarse flour known as grist. The grist is then mixed with hot water in mash tuns to convert the starches into fermentable sugars, creating a sugary liquid called wort.

Fermentation: The wort is transferred to large wooden or stainless steel washbacks, where yeast is added. The yeast ferments the sugars in the wort, producing alcohol and converting it into a beer-like liquid called “”wash.”” The wash has a relatively low alcohol content at this stage.

Distillation: The wash is then double-distilled in copper pot stills. During the first distillation, the wash is heated, and the vaporized alcohol is condensed back into liquid form, creating a liquid known as “”low wine.”” In the second distillation, the low wine is heated again, concentrating the alcohol further to produce a spirit known as “new make spirit.”

Maturation: The new make spirit is transferred to oak casks for aging. Glenfiddich 12 Year Old is matured in a combination of American oak ex-bourbon casks and European oak sherry casks. These casks play a significant role in shaping the whisky’s flavor over the 12-year aging process, as the whisky interacts with the wood, gaining complexity, color, and character.

Bottling: After maturing for a minimum of 12 years, the whisky is carefully selected by the Glenfiddich Master Blender for bottling. The whisky is non-chill filtered, meaning it retains its natural flavors and may develop a slight haze when cooled. It is then bottled at the distillery before being distributed for sale.
