About the Distillery:

Nestled in the heart of Japan, the Kozaemon Daiginjou distillery stands as a beacon of sake craftsmanship and tradition. Founded on a legacy dating back generations, the distillery is a testament to the artistry and dedication of the Kozaemon family. Surrounded by pristine landscapes and influenced by the pure waters of the region, the distillery is a sanctuary where time-honored techniques converge with a commitment to excellence.

How this Product is Made:

Crafting Kozaemon Daiginjou is an intricate process that begins with the careful selection of the finest Yamada Nishiki sake rice, known for its exceptional quality. Milled to the exacting standards required for a Daiginjou-grade sake, only the heart of the rice kernel is used to ensure purity and depth of flavor.

The brewing process unfolds with meticulous precision, combining traditional methods with modern innovations. Fermentation takes place in controlled environments, allowing the sake to develop its unique characteristics. The sake master oversees each step, from koji mold cultivation to the final blending, ensuring that Kozaemon Daiginjou embodies the essence of the Daiginjou style.
