Tasting Notes
Deep garnet with an opaque core. The nose is reserved at first, then gradually opens to blackcurrant, cassis and dark plum, followed by graphite, cedarwood and dried herbs.
On the palate, the wine is firm and layered. Dense dark fruit, savoury spice and mineral tones move slowly across a structured frame of fine, authoritative tannins. The mid-palate tightens rather than broadens, leading into a long, controlled finish marked by freshness, grip and quiet persistence.
Food Pairing
Rubicon belongs at the table with dishes of substance. It pairs seamlessly with dry-aged beef, slow-roasted lamb, venison, or richly flavoured mushroom dishes. Simple preparations allow the wine’s structure and savoury depth to take the lead. This is a wine for unhurried meals and considered pairings.

Rubicon is not merely Meerlust’s flagships. It is one of South Africa’s reference-point reds. First released in 1980, it established a benchmark for Cabernet-based wines built on restraint, structure and longevity rather than power or sweetness.
