Description
Pascal Jolivet’s Sauvage (meaning “wild”) Sancerre Blanc 2023 is cultivated on two hectares of organically farmed limestone and Kimmeridgian soils in Champtin and Bué-en-Sancerre. Crafted from old vines and aged 9–12 months on fine lees, it’s bottled unfined and unfiltered—preserving a powerful sense of terroir and purity.

About the Winery
Founded in 1987, Pascal Jolivet is a Loire Valley specialist celebrated for Sauvignon Blancs that are pure, precise, and terroir-driven. The estate farms select parcels in Sancerre and Pouilly-Fumé with an organic, low-intervention philosophy: manual harvesting, native-yeast fermentations, careful lees work, and minimal handling to preserve freshness and place. Across the range, Jolivet champions transparency of soil and vintage—producing wines that balance energy, minerality, and elegance. Sauvage comes from old vines on limestone and Kimmeridgian marl, bottled unfined and unfiltered to capture the vineyard’s natural character.
