How this product is made
The production of St-Rémy VSOP follows a meticulous process that includes aging in oak barrels and expert blending to achieve its distinctive taste:
Grapes: St-Rémy VSOP brandy is made from a selection of high-quality white grape varieties, with Ugni Blanc being the most common. These grapes provide the base wine for distillation.
Fermentation: The grapes are crushed, and the juice is fermented to create a base wine with low alcohol content.
Distillation: The base wine is double-distilled in traditional copper pot stills to produce a clear and pure eau-de-vie (unaged brandy).
Aging: St-Rémy VSOP brandy is aged for a minimum of four years in oak barrels, which is well beyond the legal requirement for VSOP brandies. During this maturation process, the brandy interacts with the oak wood, gaining complexity and depth of flavor.
Blending: After aging, the brandies of various ages are carefully blended by the Master Blender. The blending process involves combining different brandies to achieve a harmonious and balanced flavor profile.
Bottling: The final blend is filtered and bottled at its optimal strength, ready for distribution.
