About the Distillery
The Balvenie Distillery is located in Dufftown, Speyside, Scotland. It was founded by William Grant in 1892 and remains family-owned to this day. The distillery is known for its commitment to traditional methods, including floor malting, in-house cooperage, and the use of a range of cask types for maturation.
How this product is made
Malting: The distillery continues the traditional practice of floor malting a portion of its barley. Barley grains are soaked in water, allowed to germinate, and then spread across the floor of the malt house. During germination, enzymes convert the starches in the barley into fermentable sugars. Once the malting process is complete, the barley is dried in kilns to halt germination and preserve the malt’s flavor.
Mashing: The malted barley is ground into grist and mixed with hot water in the mash tun, creating a sugary liquid called wort.
Fermentation: Yeast is added to the wort, initiating fermentation, where the sugars are converted into alcohol. This process takes several days and produces a liquid known as “”wash.””
Distillation: The wash is distilled twice in copper pot stills. The unique shape and size of these stills contribute to the character and complexity of The Balvenie’s spirit.
Maturation: The distilled spirit is filled into oak casks, typically a combination of ex-bourbon and sherry casks. The whisky is aged for a minimum of 12 years, during which time it develops its distinct flavors and characteristics.
Bottling: After maturation, the whisky is carefully selected by the Master Blender and bottled at its optimal strength, ready for distribution.
Technical Details
Appearance: The Balvenie 12 Year Old has a deep gold or amber hue, developed from its time in oak casks.
Nose: The aroma is rich and inviting, with notes of honey, vanilla, dried fruits, and subtle oak spice.
Palate: On the palate, the whisky offers a smooth and velvety texture. Flavors of honey, toffee, cinnamon, and hints of fruitiness emerge.
Finish: The finish is warm and lingering, with a delicate balance of sweetness and spice.
Alcohol Content:
The Balvenie 12 Year Old typically has an alcohol by volume (ABV) of around 40% to 43%, which is standard for most single malt Scotch whiskies.
